So...she ends up being a fucking old lady without every getting her cutie mark? I mean, how much can you possibly suck at life to have that even happen in My Little Pony. And then she gets it right as she dies because she loves her friends? Does this mean shes hated her friends the whole time until she realized they died? Im very very confused right now

I think there's an element of awareness to getting your cutie mark — not just having latent talent, but realizing what it is. Nobody ever tells the story about how they got their cutie mark, then figured out what it meant after. The stories we've heard so far always a moment of inspiration, when they realize what it is they do best, and THEN they get their cutie mark immediately after.
By spending her whole life actively trying to find something she was best at, she never had a chance to reach that awareness. When she gave up trying to force it, and let herself focus on what her heart really wanted, then it finally occurred to her.

The way the show describes it, EVERY pony gets it almost indefinitely before theyre near dead of age. Are you saying, it took Applebloom god knows how many years to just stop forcing it to happen and just live her life normally? I might believe Applebloom could be kind of dim as a filly, but no one could be that stupidly ignorant that they wouldnt realize you can force that magic appearance of a cutie mark until they were practically on their deathbed. Applebloom would have to be the most retarded pony in Equestria, and somehow I just dont think she is. At some point in her teens/adulthood, she would have stopped the silly childish pursuit to chase her cutie mark and just waited for it to happen.
Also, we all know Applebloom's cutie mark will be art/craft related Friendship is Twilight's thing

I think that's mostly a holdover from the fact that, even though it's technically a "family show," the primary demographic calls for simple, relevant names.
To a certain extent, you can excuse it because they frequently have talents similar to those of their parents, so when their parents name them they do so well aware of the child's genetic predisposition to certain fields of expertise.
And from a psychological perspective, their names probably influence how they feel about themselves and the kinds of activities they pursue, guiding them towards certain special skills rather than others.
